Ingredients & Quantities

For the stew:

  • 3 boneless skinless chicken thighs (or breasts), diced 
  • 2 carrots, chopped 
  • 2 celery stalks, chopped 
  • 1 onion, chopped 
  • 2 potatoes, peeled and cubed 
  • 2 garlic cloves, minced 
  • 1 tin chopped tomatoes (400g) 
  • 500ml chicken stock 
  • 1 tsp dried thyme 
  • 1 tsp dried oregano 
  • Salt & pepper to taste 
  • 1 tbsp olive oil 

Optional extras:

  • Handful of frozen peas (add near the end) 
  • 1 tbsp tomato purée for extra richness 
  • Chopped fresh parsley to serve 


Tools You’ll Need

  • Slow cooker or crock pot 
  • Chopping board and sharp knife 
  • Measuring jug 
  • Wooden spoon 

 

How to Make It

  1. Add all ingredients to the slow cooker: chicken, veg, garlic, tomatoes, stock, herbs, salt & pepper. 
  2. Stir gently to combine. 
  3. Cook on low for 6–7 hours or high for 3–4 hours, until the chicken is tender and the veg is soft. 
  4. Taste and season again if needed. 
  5. Serve with fresh parsley and your favourite sides.

  • Swap chicken for lentils or beans for a veggie version 
  • Add a dash of cream or coconut milk at the end for richness 
  • Make a double batch and freeze half 
  • Use leftover roast chicken and reduce cook time by 1–2 hours 
  • Stir through spinach in the last 10 mins for extra greens
