For the chicken fajitas:

  • 2 large chicken breasts, sliced into strips

  • 1 red pepper, sliced

  • 1 yellow pepper, sliced

  • 1 red onion, sliced

  • 2 tbsp olive oil

  • Juice of 1 lime

Fajita seasoning mix:

  • 1 tsp paprika

  • 1 tsp ground cumin

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp chilli powder (adjust to taste)

  • ½ tsp salt

  • ¼ tsp black pepper

To serve:

  • 6–8 soft tortillas

  • Sour cream

  • Guacamole or sliced avocado

  • Salsa

  • Grated cheese

  • Fresh coriander (optional)


 

Tools You’ll Need

  • Large frying pan or griddle

  • Chopping board + sharp knife

  • Mixing bowl

  • Tongs or spatula



How to Make It

  1. In a bowl, mix the sliced chicken with all the spices, 1 tbsp of oil, and lime juice. Let it marinate while you prep the veg.

  2. Heat 1 tbsp oil in a large pan over medium-high heat. Add the chicken and cook until golden and cooked through. Remove and set aside.
