- Light but actually filling
- Packed with texture + flavour
- Perfect on its own or topped with protein
- Meal prep friendly (with a small tweak 👀)
- Naturally low carb + nutrient dense

Ingredients
Salad Base
- ½ head cauliflower (florets only)
- 3–4 Persian cucumbers, finely diced
- 1 cup cherry tomatoes, quartered
- 2 cups arugula, roughly chopped
- Large handful fresh flat-leaf parsley, chopped
- ¼ red onion, finely diced
- 1 large avocado, cubed
- ⅓ cup roasted pistachios, roughly chopped
- 2–3 oz feta cheese, crumbled
Lemon Mediterranean Dressing
- ¼ cup olive oil
- Zest + juice of 1 large lemon
- 1 tsp mustard
- 2 garlic cloves, finely minced
- 1.5 tbsp fresh oregano, finely chopped
- 1 tsp Aleppo pepper
- Salt + pepper, to taste
Method
1. Make the cauliflower base
Add your cauliflower florets to a food processor and pulse until very fine.
You’re aiming for a light, fluffy texture… almost like grains.
(This is what gives the salad that unique texture 👌)
Add to a large bowl.

2. Build the salad
To the bowl, add:
- Cucumbers
- Tomatoes
- Arugula
- Parsley
- Red onion
- Avocado
Give it a gentle mix.
3. Add crunch + flavour
Stir through:
- Pistachios
- Feta
This is where the texture really comes together.
4. Make the dressing
In a jar, add:
- Olive oil
- Lemon zest + juice
- Mustard
- Garlic
- Oregano
- Aleppo pepper
- Salt + pepper
Shake well until fully combined.
Taste and adjust if needed.

5. Toss and serve
Pour the dressing over the salad and toss until everything is coated.
Taste again… adjust salt, lemon, or oil if needed.
Serve immediately.
Tips (Don’t Skip These)
- Process your own cauliflower – store-bought is too chunky
- Add avocado + pistachios just before serving if prepping ahead
- Let it sit 5–10 minutes after mixing for the flavours to develop
- Want it heartier? Add:
- Grilled chicken
- Shrimp
- Chickpeas

Serving Ideas
- Eat it straight (you will 😅)
- Scoop with crackers or flatbread
- Serve as a side for grilled meats
- Pack into meal prep bowls
