They’re also ideal for gluten-free entertaining since this recipe uses gluten-free puff pastry sheets — but regular pastry works just as well.

Ingredients & Quantities

Pinwheels (Makes 30–35)

  • 4 sheets puff pastry, gluten-free (I used @_simplywize)

  • 200g spinach leaves, washed, dried very well, finely chopped

  • 4 spring onions, finely sliced

  • 150g Greek feta, crumbled (@chelmosaustralia)

  • 50g parmesan cheese, finely grated

  • 1 egg, whisked

  • Salt & pepper, to taste


Tools You’ll Need

  • Sharp knife

  • Baking tray

  • Baking paper

  • Mixing bowl

  • Pastry brush


How to Make Them

  1. Preheat your oven
    Set oven to 200°C (fan) or standard puff pastry baking temperature.

  2. Prepare the filling
    In a mixing bowl, combine:

    • chopped spinach

    • sliced spring onion

    • crumbled feta

    • parmesan

    • salt & pepper
      Mix well.

  3. Assemble the pinwheels

    • Lay out one sheet of puff pastry.

    • Brush lightly with whisked egg.

    • Spread an even layer of the spinach-feta mixture over the pastry.

    • Roll tightly into a log.

    • Slice into 1.5–2 cm pieces.

  4. Bake
    Transfer slices onto a baking paper–lined tray.
    Brush with egg wash.
    Bake for 20 minutes or until golden, crisp, and bubbling.

  5. Serve
    Enjoy warm or room temperature. Perfect with yoghurt dip, tzatziki, or on their own.

  • Dry the spinach extremely well — excess water prevents crisping.

  • Add dill or mint for extra Greek flavour.

  • Use lactose-free feta if needed.

  • The unbaked roll can be frozen and sliced later.
