How to Make It

  1. Prepare the Brie:
    Make sure your Brie is cold — 30 minutes in the freezer helps. If you prefer, gently scrape some of the white rind off.

  2. Preheat oven:
    Set your oven to 180°C (fan).

  3. Slice the Brie:
    Slice or cube the Brie into thin pieces.

  4. Prepare the pastry:
    Cut the puff pastry sheet into 4 rectangles (cut down the middle, then each section in half again).

  5. Assemble:
    Spread cranberry sauce onto each pastry piece.
    Add Brie slices on top.
    Sprinkle with chopped nuts.

  6. Shape the twists:
    Carefully roll each piece, slice down the middle lengthways, then twist each half upwards so the filling faces outwards. Tuck the ends underneath — you’ll make 8 twists.

  7. Season & glaze:
    Place twists on a baking sheet.
    Sprinkle with salt and pepper.
    Brush generously with egg wash.

  8. Bake:
    Bake for 30–35 minutes until golden, crunchy, and flaky.

  9. Finish:
    Drizzle with honey as soon as they come out of the oven.
    Add a little fresh rosemary to garnish.

  10. Serve:
    Enjoy warm — or let them cool slightly for the flavours to settle.
