Ingredients

Peach Filling

  • 8 fresh peaches (peeled, pitted, sliced)
  • ¼ cup white sugar
  • ¼ cup brown sugar
  • ¼ tsp ground cinnamon
  • ⅛ tsp ground nutmeg
  • 1 tsp fresh lemon juice
  • 2 tsp cornstarch


Cobbler Topping

  • 1 cup all-purpose flour
  • ¼ cup white sugar
  • ¼ cup brown sugar
  • 1 tsp baking powder
  • ½ tsp salt
  • 6 tbsp unsalted butter (chilled, cubed)
  • ¼ cup boiling water

Cinnamon Sugar Topping

  • 3 tbsp white sugar
  • 1 tsp ground cinnamon

Instructions

1. Preheat & prep

Preheat oven to 190°C (375°F).
Lightly grease a baking dish.


2. Make the peach filling

In a large bowl, combine:
peaches, white sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch.

Mix gently until peaches are coated.

Pour into your baking dish.


3. Make the topping

In a separate bowl, mix:
flour, sugars, baking powder, and salt.

Add cold butter and rub in (or use a fork) until the mixture looks like coarse crumbs.

Stir in boiling water until just combined.


4. Assemble

Drop spoonfuls of the topping over the peaches.
Don’t worry about covering it perfectly — rustic is best.


5. Add cinnamon sugar

Mix sugar and cinnamon together and sprinkle over the top.


6. Bake

Bake for 35–40 minutes until:

  • topping is golden brown
  • peach filling is bubbling

7. Serve

Let it cool slightly, then serve warm.

Best with vanilla ice cream or cream.
