Why You’ll Love This

  • Sweet + tangy honey lime chicken
  • Packed with fresh, vibrant toppings
  • Perfect for meal prep or quick dinners
  • Customisable depending on what you’ve got in

And honestly… those chips on top?
Game changer.

Ingredients 🍯🌶

Chicken + Seasoning

  • 8 boneless chicken thighs (approx 1kg / 2 lbs)
  • 1 tbsp paprika
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp salt
  • 4 cloves garlic, minced

Marinade

  • 3 tbsp olive oil (or macadamia oil)
  • Juice of 1 lime
  • 2 tbsp honey
  • 2 tsp sugar or stevia
  • 1/2 tsp salt
  • Generous handful fresh coriander (cilantro), chopped
  • 1/2 red chilli, chopped
  • 1 tsp chilli flakes (gochugaru if you have it)

Bowl Add-Ins (build your vibe)

  • Cooked rice
  • Fresh tomato salsa
  • Guacamole
  • Sour cream or yoghurt
  • Fresh coriander
  • Tortilla chips (don’t skip these 👀)

How To Make It

1. Season the chicken

Add your chicken thighs to a bowl.
Mix in paprika, cumin, coriander, salt and garlic.
Make sure everything is coated properly.

2. Make the marinade

In a separate bowl or jar, mix:
olive oil, lime juice, honey, sugar, salt, coriander, chilli + chilli flakes.

Pour it over the chicken and mix well.
Let it sit for at least 30 minutes (longer = better flavour).

3. Cook the chicken

Cook in a pan over medium-high heat until golden and slightly charred.

You want that sticky, caramelised glaze from the honey + lime.
That’s where the magic is.

Once done, slice into strips.

4. Build your bowl

Start with rice as your base.

Then layer:

  • Chicken
  • Fresh salsa
  • Guacamole
  • Sour cream
  • Extra coriander

Finish with a handful of crunchy tortilla chips on top.

Pro Tips

  • Let the chicken caramelise properly — don’t rush it
  • Add extra lime at the end for a fresh kick
  • Keep chips separate if meal prepping
  • Swap rice for cauliflower rice if you want lower carb

Make It Your Own

  • Add black beans or corn
  • Swap chicken for shrimp
  • Make it spicy with extra chilli
  • Or keep it mild and load up on creamy toppings

This is one of those bowls that looks unreal…
but tastes even better.

It’s fresh, filling, and honestly feels like something you’d order out.

Except you made it at home.
