Ingredients 🍯🌶
Chicken + Seasoning
- 8 boneless chicken thighs (approx 1kg / 2 lbs)
- 1 tbsp paprika
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp salt
- 4 cloves garlic, minced
Marinade
- 3 tbsp olive oil (or macadamia oil)
- Juice of 1 lime
- 2 tbsp honey
- 2 tsp sugar or stevia
- 1/2 tsp salt
- Generous handful fresh coriander (cilantro), chopped
- 1/2 red chilli, chopped
- 1 tsp chilli flakes (gochugaru if you have it)
Bowl Add-Ins (build your vibe)
- Cooked rice
- Fresh tomato salsa
- Guacamole
- Sour cream or yoghurt
- Fresh coriander
- Tortilla chips (don’t skip these 👀)

How To Make It
1. Season the chicken
Add your chicken thighs to a bowl.
Mix in paprika, cumin, coriander, salt and garlic.
Make sure everything is coated properly.
2. Make the marinade
In a separate bowl or jar, mix:
olive oil, lime juice, honey, sugar, salt, coriander, chilli + chilli flakes.
Pour it over the chicken and mix well.
Let it sit for at least 30 minutes (longer = better flavour).

3. Cook the chicken
Cook in a pan over medium-high heat until golden and slightly charred.
You want that sticky, caramelised glaze from the honey + lime.
That’s where the magic is.
Once done, slice into strips.
4. Build your bowl
Start with rice as your base.
Then layer:
- Chicken
- Fresh salsa
- Guacamole
- Sour cream
- Extra coriander
Finish with a handful of crunchy tortilla chips on top.
