For the dough:

  • 8 oz milk (90ºF / warm)
  • 10g dried instant yeast
  • 28 oz bread flour (or all-purpose)
  • 8 oz butter, softened

  • 3 large eggs (room temp)
  • 1 oz corn syrup (optional)
  • 8 oz heavy cream (for soaking)


For the cinnamon filling:

  • 8 oz unsalted butter (very soft)
  • 8 oz brown sugar
  • 2 tbsp cinnamon

  • Add huckleberry jam or compote over the filling before rolling


For the cream cheese frosting:

  • 8 oz cream cheese (softened)
  • 4 oz butter (softened)
  • 4 oz powdered sugar
  • ½ tsp salt
  • 1 tbsp heavy cream
  • 1 tbsp vanilla extract


Instructions

1. Make the dough

Add warm milk, yeast, and half the flour into a stand mixer. Mix until combined.

Add butter, sugar, salt, eggs, corn syrup, and remaining flour.

Mix on medium speed until a soft dough forms and pulls away from the bowl (10–20 minutes).

2. First rise

Shape into a smooth ball and place in a greased bowl.

Cover and let rise in a warm place for 90 minutes, or until doubled.


3. Make the filling

Mix butter, brown sugar, and cinnamon until smooth.


4. Roll and fill

Roll dough into a rectangle (approx. 18” x 8”).

Spread the cinnamon filling evenly.

👉 For the huckleberry version, spread a thin layer of huckleberry jam over the filling.

Roll tightly from the long edge.

Seal the edge with a little water or egg wash.


5. Cut and second rise

Cut into 1.5 inch rolls (use dental floss for clean cuts).

Place into a lined baking tray.

Cover and let rise again for 90 minutes, until doubled.


6. Cream soak (secret step)

Before baking, pour heavy cream over the rolls.

7. Bake

Bake at 350ºF / 176ºC for 20–25 minutes, until golden and cooked through (internal temp ~200ºF).


8. Make the frosting

Beat cream cheese until smooth.

9. Frost and serve

Spread frosting over warm rolls.
