Ingredients (Makes 12 muffins)

Streusel

  • 97g all-purpose flour
  • 50g sugar
  • 1 tsp lemon zest
  • 4 tbsp melted butter

 


Muffin Batter

  • 325g all-purpose flour
  • 198g sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 250mL milk
  • 2 large eggs
  • 3 tbsp melted butter
  • 59mL oil
  • 1 tsp vanilla extract
  • 2 cups fresh blueberries

 


Instructions

1. Make the streusel

In a bowl, mix flour, sugar, and lemon zest.
Pour in melted butter and stir until crumbly.
Set aside.


2. Preheat & prep

Preheat oven to 180°C (350°F).
Line a muffin tray with cases.


3. Mix dry ingredients

In a large bowl, combine:
flour, sugar, baking powder, baking soda, and salt.


4. Mix wet ingredients

In a separate bowl, whisk together:
milk, eggs, melted butter, oil, and vanilla.


5. Combine

Pour wet ingredients into dry.
Mix gently until just combined — don’t overmix.


6. Add blueberries

Fold in blueberries carefully to avoid breaking them.


7. Fill & top

Spoon batter into muffin cases (about ¾ full).
Top generously with streusel.


8. Bake

Bake for 20–25 minutes or until golden and a toothpick comes out clean.

Let cool slightly before serving.

  • Don’t overmix or muffins will be dense
  • Toss blueberries in a little flour to stop sinking
  • Use fresh lemon zest — it makes a big difference
  • Slightly underbake for softer centres
